Strawberry Frozen Yoghurt

Fresh Strawberries

I’m not sure where this started. It could be because we had a fridge full of strawberries, because it has been really hot, or maybe it was in an attempt to feed my kids something that is closer to its natural state. Whatever it was, it resulted in delicious icy cold treats that weren’t full of guilt. This is my quick and easy Strawberry Frozen Yoghurt.

What you’ll need:

      • A big pile of fresh strawberries (250g punnet is perfect)
      • A big tub of your favourite natural greek yoghurt (I used a 500g Chobani)
      • Your favourite honey (amount depends on how sweet you like it)

How to do it:

1. Blend the strawberries - you can leave the green bits on if you feel lazy and if you are a bit picky you can strain all the tiny seeds out of it. I just pull the tops off and chuck them in my blender.

2. Add the yoghurt and honey. I like to use Natural Greek Yoghurt but you can choose whichever yoghurt you prefer, it won’t effect the finished product. I added about 2 tablespoons of honey to mine.

3. Let the kids watch you blend it and the swirl of the colour change. Get everyone to taste it after blending and add more honey if needed. Once frozen the tartness of the strawberries is stronger so I always add a tiny bit more honey than if I was eating it fresh.

4. Scoop out a bowl full to eat now because it is just too good to resist and licking the bowl just doesn’t cut it.

5. Cover with plastic wrap and put it in the freezer for an hour.

6. Remove and re-blend - this helps it not get too icy as the layers can separate as it settles. Keep an eye on it as you may need to do this a couple of times.

7. Pour into kids ice-block moulds for instant healthy treats, make some ice-block cubes to use in smoothies, even a bowl full is a good alternative to ice-cream too. This is perfect for making my frozen yoghurt drops too. Once distributed into all your desired containers, just pop it back in the freezer for about 3 hours, until frozen.

We chose to do strawberry because they have been so cheap and we had a pile of them starting to get very ripe. If you don’t like strawberry or they are too expensive, you could do any flavour you like. Any type of berries are a favourite but you could try mango, passionfruit, pineapple, peaches … What’s your favourite flavour?
