Sourdough Pancakes
We have a special magical jar with our own sourdough starter that my husband lovingly cares for and cultivates. We use it for so many wonderful recipes, this time it was for pancakes for Miss 2′s Birthday Party.
Homemade Sourdough Pancakes
1 cup whole milk
1 cup plain flour
1/4 cup wholemeal flour (can do just plain flour - but I find the consistency is better for the mix)
1/2 cup sourdough starter
1 tablespoon vegetable oil
1 large egg
1/2 teaspoon salt
1 tablespoons sugar
1 teaspoon baking soda
Combine the milk, flour, and sourdough starter. Let this sit for 30 minutes. You can then add the rest of your ingredients and stir until combined.
Add more milk as needed, to get to a pancake/heavy pouring consistency.
Cook your pancakes - I am not going to bother with a full how to cook pancakes explanation. If you have gotten this far, you know what you are doing.
Homemade Egg-Free Sourdough Pancakes with Chia Seeds
Sometimes you run out of eggs, sometimes you want to try something different, sometimes there is an allergy involved, sometimes you will need this recipe to work without eggs.
There are many egg replacement options but the one that we prefer and the one that makes the pancakes look and taste the same is this one.
Simply replace the egg in the recipe above with 1 tablespoon of ground chia seeds that have been mixed with 3 tablespoons of warm water and left to sit for a few minutes. You know it is ready when it is like a gel.
Proceed to top your pancakes with whatever you please. At our party some people went for traditional jam and cream, others opted for a good drenching of lemon juice and sugar. The kids liked chocolate spread with cream, strawberries and sprinkles. On weekends we like to make a warm mixed berry syrup (simply heat frozen berries and some icing sugar).
